Cauliflower Soup Recipe

recipe further down

Hello my Fluffy Teddy Bears

Many of you Fluffy´s have requested a recipe on my delicious homemade cauliflower soup, and of course I want to share it with you. This soup is a good substitute for your salty cravings on potato chips, or chips in general. I`m definitely gonna make this soup from scratch with you in front of the camera as well as an ASMR video, because I think it`s important to show you how you make the actual soup without getting lumps in it.
If you already know how to make sauces and soups it will probably not be a problem. Anyway. I`m gonna share the ingredients with you, and try to explain the steps. I have done this so many times now, so I don`t use measuring cups, and are not really sure how much I`m using.

I`m planning on writing an recipe book in the future with all my favorite food for my Fluffy`s to purchase if they want to (food without meat, fish, egg and dairy products). I really wish for an actual book with real paper that you can hold in your hands, and have in your kitchen, because I`m not that into ebooks.  But I will probably make both, so people can choose for themselves. At least the ebook will be cheaper to produce and sell, and for that I don`t need a publisher. Maybe not with the paper book as well? I have actually no idea. But producing a real book will probably cost a lot of money.
This is just something I`m dreaming about now, but I`m probably gonna spend one 1 year writing that book, so maybe I will start the new year 2017 working on that project. I`m actually looking so much forward to this,  but I`m not sure yet. I will have to think about it a little bit longer. Food is something I really love. It have to taste good for my tongue, but it also extremely important that it is healthy food as well so you can eat and enjoy with good conscience, knowing it will effect your body and mind in a good and positive way.

Remember. There are different ways of making a cauliflower soup.  I`m just showing you the way that works best for me.

Basic Cauliflower Soup

- 1 cauliflower
- Water
- Salt
- Pepper
- Vegetable based margarine
- Full grain finely ground flour
- 1 boullion

1. Prepare the cauliflower. Remove the leafs around it.

2. Fill up a saucepan with about a liter of water and add half a teaspoon salt. Put it on the stove and put the heat on full until it starts to boil. Then you turn the heat down to a level where it boils regularly. Add the cauliflower with the tail up. Put a lid on it, and make it boil about 20-30 minutes. At 20 minutes take a fork or a knife and check if the cauliflower is soft. It should be easy to get the knife through.

3. When the cauliflower is ready take a fork and try to lift it in the "tail", from the saucepan and into a big bowl. Save the boiling water!! You are going to use it to make the soup. It contains the nutrient from the cauliflower. Look if you can see some worms in the water. If you do, take them out.

4. Take another saucepan in the same size, or add the cauliflower water to a smaller saucepan or bowl if you don`t have more of the same size. The cauliflower is now in a bowl by itself, and there it`s gonna stay until the soup is ready.

5. Now you are going to make the soup. Put the saucepan on low heat. Add some vegetable based margarine and melt it. About 2 tablespoons. If you get stresses out you can take the saucepan of the own for a second. Add  2-3 big tablespoons of full grain finely ground flour. Stir it into the butter. Add some salt, about half a teaspoon. Then add some pepper. Be careful and not take to much. You can always taste in the end, and add a little bit more salt and pepper if needed. Add the crumbled bouillon, and stir. Now you can put the saucepan on the low heat again and add tiny bits of cauliflower water while stirring. Make sure you don`t get any lumps. Add more water. Stir out the lumps. Add more and more until you feel you have the perfect thickness for your soup. Here you must make your own decision. You don`t need to use up all the water from the cauliflower soup if you don`t need to, and also sometimes you might need to add more. This is your decision.

6. Now you have the perfect thickness for your soup, and you have also tasted and made sure it`s enough salt and pepper. Now you can start working on that boiled and soft cauliflower while the soup is on the own on medium heat to stay warm. You are suppose to press the cauliflower into small pieces. I use a potato press, but you can also use a fork.

7. Add the cauliflower pieces into the soup, and stir. Just taste now, and make sure you have enough amount of salt, and that you have the right amount of thickness. Remember, you can not make the soup thicker, just thinner. If you add flour into the soup in the end at this point it will easily turn into lumps. So it`s better to have a thicker soup than a to thin soup, because you can always add a little bit more water to make it thinner.

I hope this helps! Thank you so much for your time!

Bon Appetit!
